I was diagnosed with Multiple Sclerosis on 5/19/2021. I am taking over my own blog to start a journal of this new and scary journey. I want to use this platform to write about how I'm feeling, what I'm eating, how I'm sleeping, doctor's appointments, symptoms...fuss, gripe, whine. But, ultimately, I want to use this platform to share my journey as I get to know more about MS and push forward into tomorrow. Every single day.

Recipe: Danish Butter Balls
2 Cups All Purpose Flour - Sifted
1/4 cup sugar
1/2 tsp salt
1 cup butter - softened, not melted
2 tsps vanilla
2 cups unsalted pecans - finely chopped
1 cup powdered sugar (for rolling after baked)
Preheat oven to 325°
Combine dry ingredients
Work in butter and vanilla until smooth
Add pecans and mix until well combined
Shape in to 1/2 inch balls
Bake on ungreased cookie sheet for 20 minutes
Roll in powdered sugar while still warm
Store in tin box between layers of parchment paper
Makes a lot.
